Father’s Day Menu

Father’s Day is coming up fast! If you are celebrating with a dad this year, here is a menu which capitalizes on what is currently in season in most of the United States.

I have done a Mexican-inspired menu for the dad’s out there. This day is to celebrate dad and all he does. You want to make some effort but not spend the entire day in the kitchen at the expense of spending time with pops.

This menu allows for plenty of prep ahead of time and a limited amount of time at the stove on the actual day.

Timing: The cake and beans can be made a day ahead, thus limiting prep time on Sunday. The guacamole can be made several hours ahead, sprinkled with lime juice and covered in plastic wrap. Keep in the refrigerator until 15 minutes prior to serving. The tortilla dough can be made several days in advance. Wrap in parchment paper and then a lay of cling wrap. The vegetables for the tacos can be prepped that morning and simply cooked about 30 minutes prior to serving.

The tortillas are great if you have kids who can help in the kitchen. Because they require no oil, there is no risk of spatter while cooking. You can have the kids roll out the tortillas (or use a press) and cook them using only a pan and tongs.

 

Cocktail: Tequila Strawberry Smash

Appetizers:  Keeping with the taco theme, I would go with tortilla chips and dip and a good guacamole to make it simple.

Sides: Homemade Refried Beans

Entree: Tacos with Homemade Tortillas

Dessert:    Chocolate Buttermilk Bundt Cake
