Beans and Greens

This is a simple, hearty meal which can be made vegan or vegetarian (remove the smoked turkey wings and substitute a vegan or vegetarian broth for the chicken broth), although my versions below is neither. It highlights the importance of a good broth.

Ingredients

1 smoked turkey leg or 2 smoked wings

1 lb small white beans (dried)

5 c broth

2 cloves garlic, crushed

1/2 lb greens (mustard and chard are particularly good here)

Black pepper to taste

Preparation

Rinse the beans in cold water and pick out any stones or bad beans.

Place the smoked turkey, white beans and broth in a crockpot. Cook on high for 2.5 hours.

Was the greens and chop roughly.

Turn off the pot and remove the turkey. Add the green and mix in with the beans.

Let the turkey cool enough to handle. Remove the meat from the bones and skin. Shred the meat using two forks to gently pull it apart. Return the meat to the pot. Mix well.

Season with black pepper to taste. If your broth wasn’t well salted, you may need to add a bit of salt as well.

Serve warm.
