Sweet Potato and Okra Salad

Many people dislike okra because it can get a slimy texture. However, roasting it according to the directions in this recipe greatly reduces the “slime” factor.

The flavor is amazing!

Ingredients

1 lb fresh okra

2 lb sweet potatoes

1/2 c red wine vinegar

1/2 c olive oil

1/4 c whole grain mustard

2 t mustard seeds

Salt and pepper

Preparation

Preheat the oven to 350 degrees.

Cut the tops off the okra. Slice the okra in half, lengthwise. Toss the okra with a drizzle of olive oil and a good pinch of salt. Place in a single layer on a baking sheet. Roast in the oven for about 20 minutes, turning the piece over half way through.

Peel the potatoes. Chop into a bite size pieces. Toss with olive oil and a pinch of salt. Layer on a second baking sheet and roast for 35 minutes, turning half way through.

In a large bowl, place the remaining ingredients and mix well.

When the vegetables are roasted add them to the dressing. Toss well and chill for an hour or more until serving.
